The Yummiest Potato & Bacon Soup in the World


Ok, so that's not the official title. But it should be! This potato soup is one of my all time fall favorites & we eat it more than we should! Plus it's pretty easy to whip up so you really can't lose! 
Ingredients:
4-6 medium sized potatoes
6 bacon strips
1 small onion, chopped
1 garlic clove, minced
3 Tbsp. flour
1 tsp. salt
1 tsp. basil
1/2 tsp. pepper
3 cups chicken broth
1 cup half & half
Peel & chop up all of your potatoes. You can make them as chunky as you want but I usually make mine pretty small.
Cook bacon. I hate frying bacon because it splatters everywhere so I usually bake it in the oven at 350 for about 20 minutes, depending on how thick the bacon. It is much easier, especially when you want to do a lot of bacon at a time. 
Put 1 Tbsp of bacon grease in large saucepan. Saute the onion and garlic until tender. 

Add your spices until incorporated. After that, slowly add chicken broth to the base. Once it reaches boiling, boil for about 3 minutes. Then, slowly add your 1/2 and 1/2 into the mixture. 
At this point, you can add in the potatoes and boil them until tender. However, I am usually rushed and do not have the patience to wait. So while I'm doing everything else I usually microwave my container of potato pieces. It takes a while for them to get tender, but I just do it for 2 or 3 minutes at a time and continue stirring. In this particular meal I don't think it takes away from the taste at all... Some might say that it takes away some of the nutrients, but if you're worried about having a healthy meal then you probably shouldn't be making this in the first place! :) 
While your taters are cooking, chop up your cooled bacon & put into the soup. 
YUM! We usually eat this with grilled ham & cheese, but it is definitely enough to be a meal in it's own!

  1. Looks yummy! I'll have to try this since I really only make one homemade soup and that's Cream of Chicken with artichoke hearts and mushroom. Yum!

  3. Tried this - it was amazing. I didn't have an onion on hand so I sauteed red peppers, garlic and mushrooms and it added a great flavor.
